We've all heard the saying, "Breakfast is the most important meal of the day." While that phrase has been debated over the years, one thing is clear: how you begin your day can have a significant impact on your energy, focus, and blood sugar for the hours that follow.


For many people, breakfast is often an afterthought. A quick pastry, a sugary bowl of cereal, or simply a cup of coffee may seem convenient, but these choices can cause blood sugar to rise quickly and then drop just as fast. The result? Mid-morning fatigue, cravings, and the temptation to reach for another sugary snack.


A balanced breakfast, on the other hand, provides your body with steady fuel and helps set the tone for healthier choices throughout the day.

Your breakfast doesn't have to be complicated or time-consuming. In fact, some of the healthiest breakfasts can be prepared in just a few minutes—or even the night before.

Spinach & Cheese Egg Muffins

These portable egg muffins are packed with high-quality protein and they are low-carb and naturally keto-friendly. They're easy to make ahead, store well in the refrigerator, and can be reheated for a quick breakfast during a busy week. Best of all, you can customize them to your personal taste.


Egg muffins have been around for a long time, and we wanted to feature them to break up your usual breakfast choices. You can make these once or twice a month to give you and your family some options.


They're also a wonderful choice for many people managing Type 2 diabetes because they're naturally low in sugar and rich in protein, which can help support stable blood sugar levels.

RECIPE INFORMATION

12 SERVINGS

10-15 MINUTES PREP TIME (initially). 5-10 MINUTES once you get used to putting the ingredients together. The recipe on the website says 5 minutes, that seems unusually fast.

12-15 MINUTES COOK TIME or until set.


Ingredients

  •  10 large eggs

  •  1 - 1 1/2 teaspoons sea salt or to taste

  •  1/4 - 1/2 teaspoon black pepper or to taste

  •  1/2 teaspoon garlic powder

  •  1/2 teaspoon dried basil

  •  2 cups chopped spinach

  •  1 1/2 cups grated Parmesan cheese plus more for topping


Instructions

  1. Preheat oven to 400 degrees F. Line a 12 count muffin pan with silicone liners or coat with non-stick cooking spray. We have also used paper cupcake liners, but be advised the eggs can stick to the liners.

  2. In a large 4 cup measuring cup or mixing bowl, crack in eggs and whisk together with salt and black pepper.

  3. Whisk in garlic powder and basil until combined. Stir in spinach and cheese. Divide evenly into muffin cups filling each about 2/3 full.

  4. Sprinkle with more cheese if desired. Bake in preheated oven for 12-15 minutes, or until set.


Recipe Tips:

  • Egg muffins are usually fluffy when they first come out of the oven. They will deflate as they cool. Don't be surprised.

  • For a dairy-free version simply omit the cheese or substitute your favorite dairy-free alternative. Healthy eating doesn't have to be boring. Small changes keep meals interesting while still supporting your health goals.

  • Feel free to try different ingredients to make variations. Eggs are versatile because they go with so many veggies, cheeses, and spices. There is no end to the possibilities.


And remember to enjoy your favorite coffee or tea, or lemon water to make your breakfast the most enjoyable – along with sharing it with others.

  1. Eat breakfast within a couple of hours of waking up (if it fits your personal health needs and routine).

  2. Include a source of protein every morning. Eggs, Greek yogurt (unsweetened), cottage cheese, or nut butter are all great options.
